Spaghetti and Potato Salad

without fail, i’m the one who’s been cooking dinner on New Year’s Eve. every single year. today’s no exception.

making spaghetti again tonight and potato salad. the two dishes i’m most strong in. will be taking pictures and will try my best to post it up asap. i’ll be making two batches of the spaghetti sauce. one with beef and one without. the one without will be for a couple of friends.

Fried Stingray

decided to fry stingrays for dinner. wanted to do the grilled version but thought that it’s going to be very very messy and smoky.

here’s my recipe for the fried version.

  • stingray
  • lemon
  • tamarind pulp
  • chilli powder
  • ground black pepper

as usual, i’m not going into the quantities. the quantities i use are for a family of 6 so if i were to put down the quantities, it’s not going to be of much use to anyone. better for everyone to try out on their own what’s the proper amount.

my only regret is i didn’t fry the stingray long enough for it to be crispy. anyway, it’s my brothers’ new favourite dish.

  • whole chicken, chopped into bite size pieces
  • corn, chopped
  • large potatoes, chopped
  • carrots, chopped
  • celery, chopped
  • salt and pepper to taste
  • knorr chicken cube
  • mixed herbs
  • parsley
  • large onions, chopped into quarters

decided not to write down the quantities of the ingredients i used. the quantities i use are for a family of 6 and it’s purposely made with having leftovers in mind. reason for having leftovers is i’m lazy to cook for lunch. and in case i have something on and i’m not home, my little brothers can just microwave the leftovers.

tonight’s dinner? chicken soup and some vegetables. i cheated on the soup though. no time to do the whole chicken stock and all that. so what i did was just use Campbell’s Cream of Chicken soup and then built up the soup from there. There’s like potato cubes, chicken breasts, onions, eggs and mushrooms. mmmm. i love cooking.

made risotto and grilled salmon for dinner tonight. the past few nights have all been heavy soups made with loads of pork. something light today. glad to say i remembered to take pictures this time. i’m planning to write a cookbook. maybe get it published some time in the future. who knows?

i want to open my own cafe but as of now, not enough capital and i don’t have enough experience in cooking for strangers. anyways, will put up the photos later. going to take a shower. cooking is serious business indeed.

Creamy risotto with mushrooms

since I was home on sick leave today, i decided to cook dinner. haven’t been cooking dinner in a while ever since i started working. made risotto and damn. for my first ever try at making risotto, i’d say it went perfectly well. here’s my recipe:

Ingredients

  • 1 can of mushrooms, sliced into small pieces
  • 1 can of cream of mushroom soup
  • 2 cubes of chicken stock
  • 2 onions, chopped finely
  • 2 tablespoons of chopped garlic
  • 2 tablespoons of butter
  • 2 tablespoons of olive oil
  • 3 tablespoons of canola oil
  • 2 cups of rice (uncooked)
  • salad herbs
  • pepper (black and white, freshly grounded)

Directions

  1. in a large bowl, mix the 2 cubes of chicken stock with roughly 4 cups of boiling water. mix and stir well. set aside.
  2. in another large bowl, mix the cream of mushroom with the stock from the canned mushrooms. stir well and set aside.
  3. in a medium or large pan, melt the butter on high heat and mix it with olive oil. throw in the garlics and fry for roughly 1 minute before adding in the onions. continue frying both until they turn sort of golden brown.
  4. throw in the sliced mushrooms and continue stir frying for another 1 minute.
  5. now add in canola oil. after the oil heats up suffiently, add in the uncooked rice. stir fry for 3 minutes, making sure the rice is thoroughly coated with oil.
  6. add in the mushroom soup. continue stirring till the mushroom soup is absorbed.
  7. add in the chicken stock slowly, 1 cup at a time until the stock is absorbed. continue till there is no more stock left. by now, the rice should be soft yet firm. sprinkle salad herbs and freshly ground pepper to taste.

Macaroni and Cheese

been wanting to make macaroni and cheese for a long time. finally decided to do it since there’s like 2 unopened packets of macaroni still in the cupboard. here’s my recipe.

  • 2 packets macaroni
  • 1 box cheddar cheese, grated
  • half a box of fresh milk
  • 2 tablespoons of butter

first, cook the macaroni. next, melt butter in pan and mix it with milk. melt cheese and after things have thickened a bit, dump the macaroni into the mixture. mix well and serve.

forgive me if the measurements seems so… i don’t know. i just dump everything i had in there. looked good, tasted good. ’nuff said.

this is my own version. won’t post up the recipe cause it’s still in the process of being refined… but anyway, here’s a pic i took.

Photolog: Meatloaf

recently decided to experiment with making my own meatloaf. i’ve always heard about meatloaf and i thought it’d be interesting to see if i can come up with my own recipe.

here’s what i came up with:

ingredients

4 packets of minced pork
1 packet of hotdogs
1 large white onion
2 tbspns ketchup
2 tbspns chilli sauce
2 eggs
2 tbspns black pepper powder
2 slices of crustless bread (shred by hand)

· mix the ingredients. hmmm. alot more pepper than just 2 tablespoons…

now add the eggs

· add the eggs and the ingredients are done!

chilli sauce

· here’s with the ketchup and chilli sauce.

mix well!

· mix them well!

hotdogs!

· flatten a bit of the mixture on foil and pile up the hotdogs.

cover with remaining chilli + ketchup

· cover up the hotdogs with the remaining mixture and top it off with the remaining ketchup and chilli sauce.

remember to cover well with the foil when baking so that it will not dry up. i’ll post pictures of the finished meatloaf when it’s done baking. bake it for an hour at 250°C. or at least that’s the setting i used on my oven.

by the way, you can substitute the minced pork with ground beef too.

lasagna?

tried making lasagna earlier. using my own recipe of course. no lasagna noodles so i substituted it with macaroni. hmmm. will only know the result after it finishes baking in 45mins time. wish me luck.

updates: well. not bad. it’s nice. but on hindsight, i should have used more cheese.

new recipe

just learnt a new recipe from my mum’s friend. some pasta thingy. can be made using any types of pasta like spaghetti, macaroni, etc.

ingredients:
pasta x 1 pack
tuna x 1 can
campbell soup x 1 can
fresh milk x 1/2 carton

i’m not going to write what else is needed or how it’s going to be cooked. i’m selfish with regards to recipes. nyahahaha. come on over down my place next time and i’ll cook for you guys.
